  • 2 mangos, diced
  • 2 avocados, diced
  • 1 cucumber, diced
  • 1/2 a punnet of cherry tomatoes, halved
  • 1/4 cup Parsley, finely chopped

Chicken:

  • 500g chicken thigh
  • 1 tbsp paprika
  • 2 tbsp extra virgin olive oil
  • 1 tsp salt
  • 1/2 tsp pepper

Dressing:

  • 1/2 lemon, juiced
  • 1/2 lemon, juiced
  • 3-4 tbsp extra virgin olive oil
  • 1 tsp salt

Tips for making the best Mango, Chicken & Avocado Salad

Grill the Chicken: If you have a BBQ or grill pan, grilling the chicken adds a smoky flavour that pairs perfectly with the sweetness of the mango.

Add Some Crunch: For added texture, sprinkle some toasted almonds, sunflower seeds, or crispy chickpeas on top of the salad.

Directions

  1. Marinate the chicken in the marinade ingredients, then set aside in the fridge for at least 30 minutes.
  2. Heat a pan over medium-high heat and cook the chicken for 5-7 minutes per side or until fully cooked. Let it rest for a few minutes, then slice it into strips.
  3. Place the salad ingredients in a large serving bowl and add the sliced chicken on top.
  4. In a small bowl, whisk together the dressing ingredients until well combined.
  5. Pour the dressing over the salad and gently toss to coat everything evenly.
  6. Serve and enjoy!
