Juicy lamb smashed straight onto tortillas and pan-fried until golden and crisp. These tacos bring big Mediterranean flavours with fresh tomato, cucumber, red onion, creamy tzatziki and a pop of pomegranate. Easy to make, fun to serve and perfect for a fresh twist on taco night.
In a bowl, combine the lamb ingredients. Shape the mixture into 6 even-sized balls.
Place a ball in the centre of each tortilla. Use your fingers or a spatula to gently press the lamb, spreading it evenly across the surface of the tortilla.
Heat a nonstick pan over medium heat. Place the tortillas lamb-side down in the pan. Cook for 3β4 minutes, until the lamb crisps up. Carefully flip the tortillas and cook the other side for another 2β3 minutes until crispy.
Top the lamb side of each tortilla with chopped tomatoes, cucumber, and red onion. Add crumbled feta, a dollop of tzatziki sauce and sprinkle with pomegranate seeds. Serve and enjoy!
