Mediterranean Lamb Smash Tacos

Juicy lamb smashed straight onto tortillas and pan-fried until golden and crisp. These tacos bring big Mediterranean flavours with fresh tomato, cucumber, red onion, creamy tzatziki and a pop of pomegranate. Easy to make, fun to serve and perfect for a fresh twist on taco night.

Ingredients

  • 6 mini or medium-sized tortillas
  • 1 tbsp olive oil (for cooking)

Lamb:

  • 500g lamb mince
  • 1/2 brown onion, grated
  • 2 tbsp fresh parsley, chopped
  • 2 tbsp fresh mint, chopped
  • 2 garlic cloves, minced
  • 1 tsp cumin
  • 1 tsp oregano
  • Salt & pepper

Toppings:

  • 1 cup cherry tomatoes, chopped
  • 1/2 cucumber, chopped
  • 1/2 red onion, chopped
  • 1/2 cup feta, crumbled
  • 1/4 cup pomegranate seeds
  • tzatziki sauce

Directions

  1. In a bowl, combine the lamb ingredients. Shape the mixture into 6 even-sized balls.
  2. Place a ball in the centre of each tortilla. Use your fingers or a spatula to gently press the lamb, spreading it evenly across the surface of the tortilla.
  3. Heat a nonstick pan over medium heat. Place the tortillas lamb-side down in the pan. Cook for 3–4 minutes, until the lamb crisps up. Carefully flip the tortillas and cook the other side for another 2–3 minutes until crispy.
  4. Top the lamb side of each tortilla with chopped tomatoes, cucumber, and red onion. Add crumbled feta, a dollop of tzatziki sauce and sprinkle with pomegranate seeds. Serve and enjoy!
