Ingredients

For the creamy tuna mix:

  • 850g canned tuna in spring water, well drained
  • 250g thick 0% Greek yoghurt
  • 2 tbsp kewpie mayonnaise
  • 1 1/2 tbsp soy sauce
  • 1 1/2 tbsp rice vinegar
  • 1 tsp sesame oil
  • 2 tsp honey
  • 1 tbsp spring onion (green part), finely sliced
  • 2 tsp finely grated ginger
  • 1 tsp chilli flakes (adjust to taste)

For the pickled cucumber:

  • 2 Lebanese cucumbers, thinly sliced
  • 4 tsp rice vinegar
  • 2 pinches salt
  • 1 tsp sesame oil

To serve:

  • 600g cooked white rice
  • 20g peanuts, roughly chopped
  • 1 avocado, thinly sliced
  • 4 lime wedges, to serve
  • 4 eggs, soft-boiled

Directions

For the pickled cucumber:

Add the cucumber, rice vinegar, sesame oil and salt to a bowl. Toss gently to combine, then set aside while you prepare the rest of the bowl.

Tip: This quick pickling step lightly softens the cucumber and adds a fresh, tangy crunch that balances the creamy tuna.

For the creamy tuna mix:

  1. In a large bowl, whisk together yoghurt, kewpie mayo, soy sauce, rice vinegar, sesame oil, honey, ginger and chilli flakes until smooth.
  2. Fold through the drained tuna and spring onion, breaking it up gently but keeping some texture. Taste and adjust, it should be creamy, savoury, lightly sweet and balanced with acidity.

To assemble:

  1. Divide warm rice between bowls.
  2. Top with generous spoonfuls of the tuna mix, sliced avocado, pickled cucumber and a soft-boiled egg. Finish with chopped peanuts and a squeeze of fresh lime just before eating.
