Ingredients

  • 500g skinless chicken thigh fillets
  • Salt & pepper
  • 1 tbsp soy sauce
  • 1 tbsp olive oil, for cooking
  • 2 tbsp soy sauce
  • 2 cloves garlic, finely chopped or minced
  • 1 tbsp fresh chilli, finely chopped
  • 2 tbsp lime juice
  • 2 tbsp fish sauce
  • 1 tbsp soy sauce
  • 1 tbsp brown sugar
  • 1 tbsp sesame seeds
  • 1 cup fresh coriander, finely chopped
  • 1/4 cup spring onion, sliced
  • 1/2 red onion, sliced
  • 1 tbsp sesame seeds
  • Steamed rice
  • Broccolini and cabbage, lightly steamed or sautéed in olive oil.


Directions

  1. Combine Chicken marinade ingredients
  2. In a bowl, combine the marinade ingredients. Add the chicken and marinate for at least 20 minutes.
  3. Heat oil in a frying pan over medium heat. Add the chicken and cook until golden and crispy on both sides. Remove from the pan and set aside.
  4. In a small bowl, whisk together the dressing ingredients until well combined.
  5. In a large bowl, add the salad ingredients and pour in the dressing. Shred the cooked chicken, add it to the bowl with the salad, and toss everything together until evenly coated.
  6. Serve the salad and shredded chicken over a bed of steamed rice, with broccolini and cabbage on the side.
