Storage
Keep your Choc Berry Bark in an airtight container in the fridge for up to a week. You can also freeze it for longer storage!
Substitutions
Swap the berries for your favourite fruit, or add nuts for an extra crunch.
For a sweeter bark, you can use milk chocolate, or go all out with white chocolate.
Ingredients
- 180g 70% dark chocolate (see note)
- 1 cup blueberries
- 1 cup raspberries
- 1 cup rice bubbles
- 1/2 cup shredded coconut
Directions
- Break the dark chocolate into small pieces and melt it gently in the microwave in 20-second intervals, stirring until smooth.
- Line a tin with baking paper and evenly scatter the blueberries, raspberries, and rice bubbles.
- Once the chocolate is melted, pour it over the mixture and spread it into an even layer with a spatula. Gently stir to ensure the chocolate is evenly distributed.
- Top the mixture with shredded coconut, pressing it down lightly.
- Place the tin in the fridge for at least 1 hour to allow the chocolate to set.
- Once fully set, break the bark into pieces and enjoy!
