Storage
- Best eaten fresh — the toast and egg lose their texture once refrigerated.
- Reheat in a dry pan, sandwich press or air fryer until warmed through and re-crisped; microwaving will make the bread soggy.
Substitutions
- Swap the rye bread for sourdough or wholegrain bread
- Swap the cheddar for mozzarella for a stringier melt.
- Leave out the sriracha or swap for your preferred hot sauce for less heat.
Serving Suggestions
Good on its own for a fast breakfast, or serve with sliced avocado or cherry tomatoes
Directions
- Crack the eggs into a bowl, add the spinach, and season with salt and pepper, then whisk until combined.
- Heat a large non-stick pan (around 26cm) over medium heat and add the cooking oil.
- Arrange the bread triangles in the pan, with the cut edges facing the outside of the pan and the points meeting in the centre, leaving small gaps between each triangle.
- Pour the egg and spinach mixture into the centre and along the gaps between the triangles, keeping it off the surface of the bread.
- Cook for 3–4 minutes, until the egg looks mostly set and no longer wet on top.
- Slide the toast onto a large plate, place the pan upside down over the top, then flip the plate and pan together so the toast lands back in the pan uncooked-side down.
- Sprinkle the cheese over each slice of bread and drizzle with sriracha.
- Fold the round in half so the egg and cheese are enclosed, then cut straight down the centre to make two sandwiches, making sure the cheese has melted and the egg is cooked through before you fold
- Serve immediately.
