  • 1 tbsp olive oil
  • 2 cloves garlic, minced
  • 2 tbsp Mexican spice blend

Toppings:

  • 1 head of Iceberg lettuce, use 2–3 layers per wrap
  • 1/2 red onion, diced
  • 1 red capsicum, diced
  • Shredded cheese (cheddar works well)
  • Avocado, sliced or diced
  • Greek yogurt or sour cream (optional)
  • Lime wedges for garnish (optional)
  • Steamed jasmine rice

  4. Carefully separate and wash the lettuce leaves, then pat them dry
  5. Spoon a generous portion of the steamed rice and beef filling onto each lettuce leaf.
  6. Sprinkle with shredded cheese, capsicum, onion, avocado and a dollop of Greek yogurt or sour cream.
  7. Roll the lettuce leaf over the filling to enclose it and enjoy
