Sauce:

  • 1/2 cup mayonnaise

  • Bread:
  • White cob loaf

Tips for the best Cob Loaf Chicken Sandwich

For a quicker, hassle-free option, pick up a pre-cooked rotisserie chicken from Coles. It’s a huge time-saver and still delivers the same great flavour when shredded.

Remove some of the inner bread from both the top and bottom halves of the cob loaf to form a strong shell. This helps prevent sogginess and ensures your filling stays in place.

Directions

  1. Remove the skin from the chicken and shred it into small pieces.
  2. Place the shredded chicken in a bowl and add the Filling ingredients.
  3. In a separate bowl, mix the sauce ingredients until smooth. Pour the sauce over the Filling, then stir until well combined.
  4. Slice the cob loaf lengthways to expose the soft interior. Carefully remove the inner bread from both the top and bottom halves.
  5. Spoon the chicken filling into the loaf, packing it in evenly. Cut the loaf into smaller portions and serve. Enjoy!
