Storage
- Store leftovers in an airtight container in the fridge for up to 3 days.
- Not recommended for freezing — the noodles and cabbage lose their texture once thawed.
Substitutions
- Chicken: thigh or breast fillets both work — thigh stays juicier, breast is leaner.
- Chow mein noodles: swap for fresh egg noodles or hokkien noodles
- Cabbage: swap green cabbage for wombok (Napa cabbage)
- Capsicum: swap for snow peas or sliced mushrooms.
Serving Suggestions
This is a complete meal on its own. If you want to round it out, serve with a side of steamed edamame for extra protein.
Ingredients
For the stir fry:
- 750g chicken thigh or breast fillets, thinly sliced (I use thigh)
- 4 cups green cabbage, finely shredded
- 3 tbsp neutral cooking oil
- 3 garlic cloves, finely chopped
- 450g chow mein noodles
- 2 carrots, cut into thin matchsticks
- 3 green onions, whites and greens separated, white parts finely sliced and greens cut into 3cm batons
- 1 large red capsicum, thinly sliced
- ½ large brown onion, thinly sliced
For the sauce:
- 1 tbsp honey
- 2 tbsp light soy sauce
- ½ tbsp sesame oil
- 2 tsp dark soy sauce
- 2 tbsp oyster sauce
- 1 tbsp water
- 1 tsp corn flour
Directions
- In a bowl, whisk together the corn flour, light soy sauce, dark soy sauce, honey, sesame oil, oyster sauce and water until smooth to make the sauce.
- Pour 2.5 tablespoons of the sauce over the chicken, toss to coat, and set aside to marinate for 10 minutes. Reserve the remaining sauce.
- Prepare the noodles according to packet instructions, then drain.
- Heat 2 tablespoons of the oil in a wok or large frying pan over high heat.
- Add the chicken and stir-fry until browned and mostly cooked through. Remove and set aside.
- Add the remaining tablespoon of oil to the pan, then add the brown onion, carrot, capsicum and green onion whites. Toss, adding the garlic toward the end of this step so it doesn’t catch and burn.
- Add the cabbage and stir-fry until mostly wilted.
- Return the chicken to the pan and toss through.
- Add the noodles, the remaining sauce and the green onion greens.
- Toss everything for 1–2 minutes until the sauce has thickened slightly and everything is well coated, then remove from heat and serve.
