Storage
- Store the shredded chicken filling in an airtight container in the fridge for up to 4 days.
- The filling freezes well for up to 3 months. Thaw overnight in the fridge before reheating.
- The avocado sauce is best made fresh. It will keep for 1–2 days in the fridge with plastic wrap pressed directly onto the surface to slow browning.
- Store tortillas separately and warm just before serving.
Substitutions
- Chicken thighs: Swap for chicken breast. It stays juicy thanks to the sauce, but check it at the 5-hour mark on LOW as breast dries out faster.
- Chipotle in adobo: Use 1 tsp smoked paprika plus a pinch of chilli flakes if you can’t find it. You’ll lose a little smokiness but it still works.
- Greek yoghurt: Swap for sour cream in the avocado sauce.
- Tortillas: Use lettuce cups for a lighter option, or serve the filling over rice as a burrito bowl.
- Crushed tomatoes: Passata works if that’s what’s in the pantry.
Serving Suggestions
Serve with warm tortillas, a generous drizzle of avocado sauce, shredded cheese, fresh coriander and lime wedges. Add a simple side of charred corn or a crunchy cabbage slaw if you’re feeding a bigger crowd. Leftover filling also makes a great quesadilla or loaded nachos the next day.
Ingredients
For the spice mix:
- 1.5 tbsp smoked paprika
- 1 tbsp ground cumin
- 1 tbsp dried oregano
- ½ tsp ground coriander
- 1 tsp salt
- ½ tsp black pepper
For the slow cooker:
- 1kg chicken thigh fillets
- 1 red onion, finely chopped
- 1 red capsicum, thinly sliced
- 3 garlic cloves, finely chopped
- 400g crushed tomatoes
- 2 tbsp tomato paste
- 1 tbsp chipotle in adobo sauce
- 125ml (1/2 cup) chicken stock
- 1 lime, juiced (added at the end)
For the avocado sauce:
- 1 large ripe avocado
- 100g Greek yoghurt
- 1 small handful coriander (leaves and stems)
- 1.5 tbsp lime juice
- 1 pinch of salt
- 2–3 tbsp water (to loosen)
To serve:
- 12 small tortillas
- 1 cup shredded cheese
- Extra coriander and lime wedges
Directions
- Place the chicken, onion, capsicum, garlic, tomato paste, chipotle in adobo sauce, crushed tomatoes and chicken stock in the slow cooker.
- Combine the smoked paprika, cumin, oregano, ground coriander, salt and pepper in a small bowl. Pour the spice mix over everything in the slow cooker and stir well to combine.
- Cook on LOW for 6 hours or HIGH for 3½–4 hours, until the chicken shreds easily with a fork.
- Shred the chicken directly in the slow cooker using two forks. If the sauce looks thin, cook on HIGH with the lid off for 15–20 minutes until it thickens and clings to the chicken.
- Stir through the lime juice. Taste and adjust the seasoning.
- For the avocado sauce, blend the avocado, Greek yoghurt, coriander, lime juice and salt in a blender until smooth, adding water a little at a time until it reaches a drizzling consistency.
- Dip each tortilla into the sauce in the slow cooker. Fill with the shredded chicken and sprinkle over the cheese, then fold in half.
- To cook:
- Option 1 sandwich press: Place the folded tacos in a sandwich press and cook for 2–3 minutes until the cheese melts and the tortilla turns golden.
- Option 2 oven: Place the folded tacos on a lined baking tray and bake at 200°C for 8–10 minutes, flipping halfway, until crisp and golden.
- Serve with the avocado sauce for drizzling or dipping, plus extra coriander and lime wedges.
