Ingredients

  • 2 ripe peaches, halved and pitted
  • 1 bunch asparagus, trimmed and cut into 3 cm lengths
  • 1 ball of burrata cheese, torn into pieces
  • 4 cups mixed salad greens (rocket, spinach, or your favourite mix)
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, finely diced
  • 1/2 avocado, diced
  • ¼ cup toasted almonds or pistachios (optional)
  • 2 tbsp olive oil, plus extra for grilling
  • 1 tbsp balsamic glaze
  • Salt and black pepper to taste

Directions

  1. Heat your barbecue to medium-high.
  2. Brush the peach halves and asparagus with olive oil. Place them on the BBQ and cook for 2–3 minutes per side until the peaches have grill marks and the asparagus is tender. Slice the peaches into wedges once grilled.
  3. Arrange the mixed greens on a serving plate. Top with cherry tomatoes, red onion, avocado, peaches, asparagus, and burrata pieces. Drizzle with olive oil and balsamic glaze. Sprinkle with salt, pepper, and toasted nuts. Serve and enjoy!
