Easy Overnight Focaccia with Rosemary & Sea Salt (No Knead)
If you’ve ever wanted bakery-style focaccia at home, this recipe makes it simple. With just a handful of ingredients, an overnight rise, and no heavy kneading, you’ll end up with golden, pillowy bread that’s crisp on the outside and soft inside. In a large bowl, combine flour, salt and yeast. Add water and a drizzle of olive oil. Mix with a spoon until you get a sticky, shaggy dough.
Optional: Over the next hour, give the dough 2–3 rounds of stretch and fold in the bowl, 20–30 minutes apart. This helps build gluten and makes the dough stronger.
Drizzle the top with olive oil, cover, and refrigerate overnight (12–18 hrs).
The next day, take the dough out and let it sit at room temp for 1–2 hours. It should look bubbly and relaxed.
