Ingredients
- 6 mini or medium-sized tortillas
- 1 tbsp olive oil (for cooking)
Lamb:
- 500g lamb mince
- 1/2 brown onion, grated
- 2 tbsp fresh parsley, chopped
- 2 tbsp fresh mint, chopped
- 2 garlic cloves, minced
- 1 tsp cumin
- 1 tsp oregano
- Salt & pepper
Toppings:
- 1 cup cherry tomatoes, chopped
- 1/2 cucumber, chopped
- 1/2 red onion, chopped
- 1/2 cup feta, crumbled
- 1/4 cup pomegranate seeds
- tzatziki sauce
Directions
- In a bowl, combine the lamb ingredients. Shape the mixture into 6 even-sized balls.
- Place a ball in the centre of each tortilla. Use your fingers or a spatula to gently press the lamb, spreading it evenly across the surface of the tortilla.
- Heat a nonstick pan over medium heat. Place the tortillas lamb-side down in the pan. Cook for 3–4 minutes, until the lamb crisps up. Carefully flip the tortillas and cook the other side for another 2–3 minutes until crispy.
- Top the lamb side of each tortilla with chopped tomatoes, cucumber, and red onion. Add crumbled feta, a dollop of tzatziki sauce and sprinkle with pomegranate seeds. Serve and enjoy!
