Ingredients
Salad:
- 2 mangos, diced
- 2 avocados, diced
- 1 cucumber, diced
- 1/2 a punnet of cherry tomatoes, halved
- 1/4 cup Parsley, finely chopped
Chicken:
- 500g chicken thigh
- 1 tbsp paprika
- 2 tbsp extra virgin olive oil
- 1 tsp salt
- 1/2 tsp pepper
Dressing:
- 1/2 lemon, juiced
- 1/2 lemon, juiced
- 3-4 tbsp extra virgin olive oil
- 1 tsp salt
Directions
- Marinate the chicken in the marinade ingredients, then set aside in the fridge for at least 30 minutes.
- Heat a pan over medium-high heat and cook the chicken for 5-7 minutes per side or until fully cooked. Let it rest for a few minutes, then slice it into strips.
- Place the salad ingredients in a large serving bowl and add the sliced chicken on top.
- In a small bowl, whisk together the dressing ingredients until well combined.
- Pour the dressing over the salad and gently toss to coat everything evenly.
- Serve and enjoy!
