Storage

Keep your Choc Berry Bark in an airtight container in the fridge for up to a week. You can also freeze it for longer storage!

Substitutions

Swap the berries for your favourite fruit, or add nuts for an extra crunch.

For a sweeter bark, you can use milk chocolate, or go all out with white chocolate.

Ingredients

  • 180g 70% dark chocolate (see note)
  • 1 cup blueberries
  • 1 cup raspberries
  • 1 cup rice bubbles
  • 1/2 cup shredded coconut



Directions

  1. Break the dark chocolate into small pieces and melt it gently in the microwave in 20-second intervals, stirring until smooth.
  2. Line a tin with baking paper and evenly scatter the blueberries, raspberries, and rice bubbles.
  3. Once the chocolate is melted, pour it over the mixture and spread it into an even layer with a spatula. Gently stir to ensure the chocolate is evenly distributed.
  4. Top the mixture with shredded coconut, pressing it down lightly.
  5. Place the tin in the fridge for at least 1 hour to allow the chocolate to set.
  6. Once fully set, break the bark into pieces and enjoy!
